
St. Francis House Serving Meal Guide
Note: Most times the volunteers will serve the meal, prepare next days sack lunches, wash dishes, and clean the kitchen area when through. Please see staff person if you cannot do some of these, or have any questions. We want your serving experience to be enjoyable.
Before Dinner:
- Put fresh water in water jug.
- Wipe off coffee pot and milk area. Refill sugar (if needed). Fill green tray with coffee cups.
- Wipe off dining area tables (if needed).
- Please check the refrigerators and use small quantity leftovers available as part of dinner.
- When bringing in items such as condiments: be sure to check the refrigerators. Please use up what is there before opening any new items.
- House Guests will line up for prayer at 6:20 and will be served at 6:30pm (sharp).
- Prayer before meal may be said by a Volunteer if desired. (Otherwise, Staff Person)
Serving Meal:
- Set out china plates, drinking cups, bowls, as needed. Please throw away cracked dinnerware.
- Meal is served Buffet Style. (It is a good idea to dish up the main course and anything else that needs to be portioned out, so everyone receives his or her share). If any food is left, offer seconds.
- Toward the end of the meal the residents will bring their dirty dishes and place in the large gray washtub. This tub should be emptied occasionally and washing of dishes started.
- Dishwashers may be used if desired. Please load dishwashers properly (if using). Please wash all pots and pans and trays by hand.
Sack Lunches: (for next work day)
(optional. A resident will do this if you do not wish to!)
- Check with staff person as to how many lunches are needed. (Usually 25)
- Check refrigerator for leftover lunches; check to see that they are made with items on lunch list (posted in kitchen). Please include a napkin. Use a paper towel if none are available.
- Make up snack and cookie bags for lunches. (See lunch snack drawer)
- Bread for sandwiches is located at the west end of the kitchen. Cold meat, cheese, butter, and mayo
are in the refrigerator. Lunch sacks, and plastic sandwich bags are in the drawers.
